Ingredients

  • 2 cups Almond flour
  • 0.5 cup Coconut flour
  • 0.75 cup Granulated erythritol
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 5 large Eggs
  • 0.75 cup Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 0.5 cup Melted butter
  • 1 tablespoon Orange zest
  • 1 tablespoon Lemon zest
  • 0.5 cup Chopped low-carb dried fruits (like sugar-free cranberries)
  • 0.25 cup Chopped pecans or walnuts
  • 0.25 cup Chopped dark chocolate (sugar-free)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

Step 2

In a large mixing bowl, whisk together almond flour, coconut flour, erythritol, baking powder, and salt until well combined.

Step 3

In another bowl, whisk the eggs until slightly frothy. Add almond milk, vanilla extract, almond extract, and melted butter, and mix well.

Step 4

Gently fold the wet mixture into the dry ingredients until there are no lumps. The batter will be thick.

Step 5

Stir in the orange zest, lemon zest, chopped low-carb dried fruits, nuts, and dark chocolate. Mix until evenly distributed throughout the batter.

Step 6

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 55-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 8

Allow the panettone to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.

Step 9

Once cooled, slice and enjoy your Low Carb Classic Panettone as a festive holiday treat!
