Ingredients

  • 2 pounds ground beef
  • 1 large, finely chopped onion
  • 14.5 ounce can canned diced tomatoes
  • 0.5 cup almond flour
  • 2 large eggs
  • 3 minced garlic cloves
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons, chopped fresh parsley
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet, heat olive oil over medium heat and sauté the chopped onion until it's translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine the ground beef, sautéed onions and garlic, beaten eggs, almond flour, Worcestershire sauce, salt, pepper, chopped parsley, and half of the canned diced tomatoes.

Step 4

Mix all ingredients together gently using your hands until just combined. Be careful not to over-mix as it can make the meatloaf dense.

Step 5

Shape the mixture into a loaf, approximately 9x5 inches, and place it in a lightly greased baking dish.

Step 6

Spoon the remaining canned diced tomatoes over the top of the meatloaf.

Step 7

Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C).

Step 8

Once cooked, remove the meatloaf from the oven and let it rest for at least 10 minutes before slicing and serving.
