Ingredients

  • 500 grams Ground beef
  • 250 grams Ground pork
  • 50 grams Parmesan cheese, grated
  • 50 grams Almond flour
  • 2 pieces Large eggs
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 2 tablespoons Tomato paste
  • 400 grams Canned crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Red pepper flakes
  • 6 leaves Basil leaves, fresh
  • 200 milliliters Water

Directions

Step 1

In a large bowl, combine ground beef, ground pork, grated Parmesan cheese, almond flour, eggs, minced garlic, chopped parsley, salt, and black pepper. Mix well with your hands until all ingredients are thoroughly combined.

Step 2

Form the meat mixture into meatballs, approximately 1.5 inches in diameter. You should have around 18-20 meatballs.

Step 3

In a large skillet, heat olive oil over medium-high heat. Add the meatballs in batches, ensuring not to overcrowd the pan, and brown them on all sides. This should take about 7-8 minutes per batch. Once browned, remove them from the skillet and set aside.

Step 4

In the same skillet, add more olive oil if necessary and then sauté the chopped onion over medium heat until soft and translucent, about 5 minutes.

Step 5

Stir in the tomato paste and cook for an additional 1 minute to enhance its flavor.

Step 6

Add canned crushed tomatoes, Italian seasoning, red pepper flakes, and water. Stir to combine. Bring the sauce to a simmer.

Step 7

Return the meatballs to the skillet, stirring gently to coat them with the sauce. Cover the skillet and let the meatballs simmer in the sauce for 20-25 minutes, or until cooked through.

Step 8

Occasionally stir the sauce and meatballs gently to prevent sticking, and add more water if the sauce becomes too thick.

Step 9

Once cooked, sprinkle fresh basil leaves over the meatballs before serving.

Step 10

Serve the low carb meatballs with tomato sauce hot, alongside your favorite low carb side dish if desired.
