Ingredients

  • 4 Large eggs
  • 3 cups Unsweetened almond milk
  • 1 cup Heavy cream
  • 0.5 cup Granular erythritol or other low-carb sweetener
  • 2 teaspoons Vanilla extract
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Rum, brandy, or bourbon (optional)

Directions

Step 1

Separate the egg yolks from the whites, placing the yolks in a medium-sized bowl.

Step 2

Add the granular erythritol to the egg yolks and whisk until the mixture becomes thick and pale, set aside.

Step 3

In a medium saucepan, combine the almond milk, heavy cream, and salt. Heat on medium, stirring occasionally until just hot but not boiling.

Step 4

Slowly add about 1/2 cup of the hot cream mixture to the egg yolk mixture while constantly whisking to temper the yolks.

Step 5

Pour the tempered yolk mixture back into the saucepan with the remaining hot cream, continually whisking to prevent curdling.

Cook the mixture over medium heat, stirring constantly with a wooden spoon, until it thickens slightly and can coat the back of the spoon, around 165°F (74°C).

Remove from heat and stir in the vanilla extract, nutmeg, and cinnamon.

Allow the egg nog to cool to room temperature and then transfer to the refrigerator to chill for at least 2 hours.
