Ingredients

  • 4 pounds Whole chicken
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 Garlic cloves, minced
  • 1 Lemon, cut into wedges
  • 0.5 bunch Fresh thyme
  • 0.5 bunch Fresh rosemary
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Pat the chicken dry with paper towels to ensure the skin becomes crispy.

Step 3

In a small bowl, combine olive oil, salt, black pepper, and minced garlic. Mix well.

Step 4

Gently loosen the skin of the chicken by sliding fingers under the skin over the breast and thighs.
