Ingredients

  • 1 lb chicken breast
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 medium zucchini
  • 1 medium red onion
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 3 cloves garlic
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 8 wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes while you prepare the other ingredients.

Step 2

Cut the chicken breast into 1-inch cubes and set aside in a large mixing bowl.

Step 3

Chop the red bell pepper, yellow bell pepper, zucchini, and red onion into 1-inch pieces and add them to the bowl with the chicken.

Step 4

In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, ground cumin, smoked paprika, salt, and black pepper to create the marinade.

Step 5

Pour the marinade over the chicken and vegetables, mixing well to ensure everything is evenly coated. Cover and refrigerate for at least 20 minutes to allow the flavors to meld.

Step 6

Preheat your grill to medium-high heat.

Step 7

Thread the marinated chicken and vegetables alternately onto the soaked skewers, leaving a small gap between each piece for even cooking.

Step 8

Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred and tender.

Step 9

Remove the skewers from the grill and let rest for a couple of minutes before serving.

Step 10

Serve the kebabs hot with your favorite low-carb side dish or salad.
