Ingredients

  • 70 grams Almond flour
  • 15 grams Coconut flour
  • 120 milliliters Unsweetened almond milk
  • 50 grams Butter
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Xanthan gum
  • 3 large Eggs
  • 300 grams Sugar-free vanilla ice cream
  • 60 milliliters Sugar-free chocolate sauce

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the unsweetened almond milk, butter, and salt. Heat over medium heat until the butter is melted and the mixture begins to simmer.

Step 3

Remove from heat and quickly stir in the almond flour, coconut flour, and xanthan gum until everything is well combined and a dough forms.

Step 4

Allow the dough to cool for 5-7 minutes, stirring occasionally to help it cool faster.

Step 5

Add the eggs one at a time, vigorously mixing with a wooden spoon or electric hand mixer until each egg is fully incorporated into the dough before adding the next.

Step 6

Transfer the dough into a piping bag fitted with a large round tip.

Step 7

Pipe small mounds (roughly 2 inches in diameter) onto the prepared baking sheet, leaving space between each mound as they will expand.

Step 8

Bake in the preheated oven for 20-25 minutes or until the profiteroles are puffed up and golden brown.

Step 9

Once baked, remove from the oven and allow them to cool completely on a wire rack.

Step 10

To serve, slice each profiterole horizontally and fill with a scoop of sugar-free vanilla ice cream. Drizzle sugar-free chocolate sauce over the top.

Step 11

Enjoy your low-carb profiteroles as a delightful dessert or snack!
