Ingredients

  • 100 g Unsweetened dark chocolate (70% cocoa or higher)
  • 100 g Unsalted butter
  • 50 g Erythritol sweetener
  • 15 g Almond flour
  • 3 large Eggs
  • 1 large Egg yolk
  • 1 tsp Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 200°C (392°F). Grease four ramekins with butter and set aside.

Step 2

Melt the dark chocolate and butter together in a heatproof bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Stir occasionally until smooth. Remove from heat and let it cool slightly.

Step 3

In a separate mixing bowl, whisk together the erythritol sweetener, eggs, and egg yolk until light and frothy, around 2-3 minutes.

Step 4

Gently fold the melted chocolate mixture into the egg mixture using a spatula.
