Ingredients

  • 2 cups Cauliflower rice
  • 1 cup Almond flour
  • 1 cup Canned chickpeas
  • 1 medium Onion
  • 3 Garlic cloves
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh cilantro
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 3 tablespoons Olive oil

Directions

Step 1

Begin by draining and rinsing the chickpeas. Set them aside to dry on a paper towel to remove excess moisture.

Step 2

In a food processor, combine cauliflower rice and almond flour. Pulse until the mixture is finely ground.

Step 3

Roughly chop the onion, garlic, parsley, and cilantro. Add them to the food processor along with the chickpeas.

Step 4

Include the ground cumin, ground coriander, baking powder, salt, and black pepper in the processor.

Step 5

Pulse all ingredients until they are well combined and form a coarse paste. Avoid over-processing to prevent the mixture from becoming too smooth.

Step 6

Transfer the falafel mixture to a bowl, cover, and refrigerate for at least 30 minutes to help it firm up.

Step 7

Once chilled, take the mixture and divide it into 8 equal portions. Shape each portion into a small patty.

Step 8

In a large skillet, heat olive oil over medium heat. Carefully place the patties into the skillet, cooking them in batches if necessary.

Step 9

Cook each patty for about 3-4 minutes per side, or until they are golden brown and crispy on both sides.

Step 10

Remove the patties from the skillet and place them on a paper towel to drain any excess oil.

Step 11

Serve the low-carb falafel patties warm, alongside a fresh salad, in lettuce wraps, or with your favorite dipping sauce.
