Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1.5 cups sharp cheddar cheese, shredded
  • 0.5 cup mozzarella cheese, shredded
  • 0.25 cup Parmesan cheese, grated
  • 2 tbsp unsalted butter
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp ground mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp paprika

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-7 minutes until tender but not mushy. Drain and set aside.

Step 3

In a large saucepan, heat the butter over medium heat until melted. Add the heavy cream and cream cheese, stirring until the cream cheese is melted and the mixture is smooth.

Step 4

Add the cheddar, mozzarella, and Parmesan cheeses to the saucepan, reserving a handful of cheddar for topping. Stir continuously until the cheese is fully melted and the sauce is creamy.

Stir in the garlic powder, onion powder, ground mustard, salt, black pepper, and paprika into the cheese sauce.

Add the cooked cauliflower into the cheese sauce and gently stir until the cauliflower is well coated.
