Ingredients

  • 1 medium Bell pepper, chopped
  • 1 cup Green beans, chopped
  • 6 cups Vegetable broth
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.5 teaspoon Dried thyme
  • 1 unit Bay leaf
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the minced garlic and chopped onion, sauté until the onion is translucent, about 5 minutes.

Step 3

Add the celery, carrot, zucchini, bell pepper, and green beans. Cook for another 5 minutes, stirring occasionally.
