  • 1.5 cups Almond flour
  • 1 tablespoon Baking powder

  • 0.25 cup Granulated erythritol
  • 0.25 cup Butter
  • 1.5 cups Mozzarella cheese (shredded)
  • 2 ounces Cream cheese
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Ground cinnamon
  • 2 tablespoons Powdered erythritol
  • 3 ounces Cream cheese (for frosting)
  • 2 tablespoons Butter (for frosting)
  • 0.25 cup Powdered erythritol (for frosting)
  • 0.5 teaspoon Vanilla extract (for frosting)
  • 1 tablespoon Heavy cream

Directions

Step 1

Preheat your oven to 375°F (190°C) and line an 8x8 inch baking dish with parchment paper.

Step 2

In a medium bowl, mix the almond flour, baking powder, xanthan gum, and granulated erythritol. Set aside.

Step 3

In a microwave-safe bowl, combine the mozzarella cheese and 2 ounces of cream cheese. Microwave for about 1 minute to melt, stirring halfway through until everything is smooth and combined.

Add the melted cheese mixture to the dry ingredients. Add the egg and vanilla extract, then mix thoroughly to form a dough.
