Ingredients

  • 2 cups Almond flour
  • 0.75 cup Granular erythritol sweetener
  • 0.5 cup Unsalted butter, softened
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.75 cup Sugar-free chocolate chips

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, erythritol, baking soda, and salt, and mix well.

Step 3

In another bowl, cream together the softened butter and erythritol until light and fluffy using an electric mixer, about 2 minutes.

Step 4

Add the egg and vanilla extract to the butter mixture, and mix until well combined.

Step 5

Gradually incorporate the dry mixture into the wet mixture, stirring until a soft dough forms.

Step 6

Gently fold in the sugar-free chocolate chips until evenly distributed throughout the dough.

Step 7

Using a tablespoon scoop, drop portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Press down gently on each ball to slightly flatten.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

Step 10

Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
