Ingredients

  • 1 pound ground beef (80% lean)

  • 3 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cayenne pepper
  • 14.5 ounces diced tomatoes with green chilies
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 can (15 ounces) black soybeans, rinsed and drained
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the diced onion and minced garlic to the pot. Saute for 3-4 minutes or until the onion is translucent.

Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
