Ingredients

  • 1 pound Chicken breast
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 small Onion
  • 2 Celery stalks
  • 1 Green bell pepper
  • 1 bunch Bok choy
  • 1 cup Bean sprouts
  • 0.25 cup Low-sodium soy sauce
  • 0.5 cup Chicken broth
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Xanthan gum

Directions

Step 1

Thinly slice the chicken breast into bite-sized strips.

Step 2

Mince the garlic, and thinly slice the onion, celery, and green bell pepper. Roughly chop the bok choy.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Step 4

Add the sliced chicken to the skillet and stir-fry until fully cooked and browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add the remaining tablespoon of olive oil.

Step 6

Add minced garlic and sliced onion, stir-frying for about 1 minute until garlic is fragrant.

Add celery, bell pepper, and bok choy to the skillet and stir-fry for another 3-4 minutes until vegetables are tender-crisp.
