Ingredients

  • 1.5 pounds Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 4 cups Cauliflower rice
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 4 ounces Cream cheese
  • 1 cup Frozen peas and carrots
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the chicken breasts into bite-sized pieces. Season with salt, black pepper, garlic powder, and onion powder.

Step 3

In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
