Ingredients

  • 16 oz shirataki noodles
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 1 tsp Italian seasoning
  • 15 oz crushed tomatoes, no sugar added
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup heavy cream
  • 4 oz cream cheese, cubed
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup parmesan cheese, grated
  • 2 tbsp fresh basil, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Drain and rinse the shirataki noodles under cold water for about 2 minutes. Pat them dry with a paper towel to remove excess moisture.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

Step 4

Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned, about 5-7 minutes. Stir in the Italian seasoning, crushed tomatoes, salt, and pepper. Let the mixture simmer for 10 minutes, allowing the flavors to meld.

Step 5

Reduce the heat to low and stir in the heavy cream and cubed cream cheese. Continue stirring until the cream cheese has melted and the sauce is creamy.

Step 6

In a large mixing bowl, combine the shirataki noodles with the beef and sauce mixture.

Step 7

Transfer the noodle and sauce mixture into a 9x13-inch baking dish. Top with shredded mozzarella, cheddar, and parmesan cheese.

Step 8

Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.

Step 9

Garnish the bake with fresh chopped basil before serving to add a burst of flavor. Serve hot.
