Ingredients

  • 1 lb ground beef (80% lean, 20% fat)
  • 0.5 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 4 slices sharp cheddar cheese slices
  • 8 leaves large iceberg or romaine lettuce leaves
  • 1 medium tomato, sliced
  • 0.5 small red onion, thinly sliced
  • 0.25 cup pickles, sliced
  • 0.25 cup mayonnaise
  • 2 tbsp mustard

Directions

Step 1

In a large bowl, gently mix the ground beef with kosher salt and freshly ground black pepper. Divide the mixture into 4 equal parts and shape each into a patty about 3/4 inch thick.

Step 2

Preheat a skillet or grill pan over medium-high heat. Once hot, place the beef patties in the pan. Cook for about 3-4 minutes on each side, or until they reach your desired level of doneness (internal temperature should be 160°F for fully cooked burgers).

In the last minute of cooking, place a slice of cheddar cheese on each patty. Cover the pan to help the cheese melt thoroughly.
