Ingredients

  • 250 grams Gruyère cheese
  • 250 grams Emmental cheese
  • 1 large Garlic clove
  • 1 cup Dry white wine
  • 1 tablespoon Lemon juice
  • 1 tablespoon Brandy (optional)
  • 1 pinch Ground nutmeg
  • 1 pinch Ground black pepper
  • 1 teaspoon Baking soda

Directions

Step 1

Grate the Gruyère and Emmental cheeses, and mix them together in a bowl. Set aside.

Cut the garlic clove in half and rub the cut sides along the inside of a heavy-bottomed saucepan or fondue pot.

Pour the dry white wine and lemon juice into the pot and gently heat on medium until warm but not boiling.

Gradually add the cheeses to the pot, one handful at a time, stirring continuously with a wooden spoon in a zigzag pattern until the cheese is melted and smooth.

If using, stir in the brandy once the cheese is completely melted.
