Ingredients

  • 8 oz Cream cheese
  • 1 cup Ricotta cheese
  • 2 tablespoons Sweetener (such as erythritol)
  • 1 teaspoon Vanilla extract
  • 4 large Eggs
  • 3 tablespoons Almond flour
  • 2 tablespoons Unsalted butter
  • 1 pinch Pinch of salt
  • 1 cup Sour cream (for serving)
  • 1 cup Fresh berries (for serving)

Directions

Step 1

In a medium bowl, combine the cream cheese, ricotta cheese, sweetener, and vanilla extract. Mix until smooth and well blended, then set aside.

In a separate bowl, whisk the eggs until frothy. Gradually add the almond flour and a pinch of salt, whisking continuously until a smooth batter forms.

Heat a non-stick skillet over medium heat and lightly grease with some of the butter.
