  • 8 ounces imitation crab meat
  • 1 large avocado
  • 0.5 large cucumber
  • 4 tablespoons cream cheese
  • 0 soy sauce (optional)
  • 0 wasabi (optional)

Directions

Step 1

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains.

Step 2

Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for about 3-5 minutes until slightly tender.

Step 3

Stir the rice vinegar and salt into the microwaved cauliflower rice, then set aside to cool.

Peel the avocado and slice it into thin strips. Similarly, peel the cucumber, remove seeds if desired, and cut it into thin matchstick pieces.
