  • 1 tsp black pepper

  • 1 large onion
  • 4 garlic cloves
  • 2 celery stalks
  • 1 medium carrot
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 cup red wine
  • 1 bay leaf
  • 4 sprigs fresh thyme
  • 8 oz mushrooms
  • 1 tbsp butter

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Cut the beef chuck roast into large 2-inch chunks and season with salt and pepper.

Step 3

Heat olive oil in a large Dutch oven over medium-high heat. Once hot, sear the beef chunks until browned on all sides, working in batches if necessary. Remove the beef and set aside.

Dice the onion, mince the garlic, and chop the celery and carrot.

In the same pot, add the onion, garlic, celery, and carrot. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
