Ingredients

  • 1 pound Ground beef (85% lean)
  • 0.5 cup Yellow onion, finely chopped
  • 2 large Garlic cloves, minced
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper (optional, for heat)
  • 1 tablespoon Tomato paste
  • 0.25 cup Beef broth or water
  • 8 leaves Romaine lettuce leaves
  • 1 large Avocado, sliced
  • 0.5 cup Shredded cheddar cheese
  • 1 cup Cherry tomatoes, quartered
  • 0.5 cup Sour cream
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a wooden spoon, until browned, about 6-8 minutes.

Step 2

Drain excess fat from the skillet, leaving just enough to coat the pan. Add the onion and garlic, and cook until the onion is translucent, about 3-4 minutes.

Step 3

Stir in chili powder, cumin, paprika, salt, black pepper, and cayenne pepper (if using). Cook for 1 minute to allow the spices to become fragrant.

Step 4

Add tomato paste and beef broth (or water) to the skillet. Stir well to combine, ensuring the beef is evenly coated. Simmer until the liquid reduces slightly, about 3-4 minutes.

Step 5

Remove the beef mixture from heat.

Step 6

Assemble the tacos by placing a large spoonful of the beef mixture in each Romaine lettuce leaf.

Step 7

Top with sliced avocado, cheddar cheese, quartered cherry tomatoes, a dollop of sour cream, and a sprinkle of fresh cilantro.

Step 8

Serve immediately and enjoy your low-carb classic beef tacos!
