Ingredients

  • 1 pound Flank steak
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 Yellow bell pepper
  • 1 Medium onion
  • 1 tablespoon Butter
  • 1 Avocado
  • 0.25 cup Fresh cilantro
  • 0.5 cup Sour cream
  • 0.5 cup Cheddar cheese, shredded

Directions

Step 1

Slice the flank steak against the grain into thin strips, about 1/4 inch thick.

Step 2

In a large mixing bowl, whisk together olive oil, lime juice, ground cumin, paprika, garlic powder, onion powder, salt, and black pepper to create the marinade.

Step 3

Add the steak strips to the marinade, ensuring each piece is well coated. Let it marinate for at least 30 minutes in the refrigerator.

Step 4

While the steak is marinating, thinly slice the red, green, and yellow bell peppers as well as the onion.

Step 5

Heat a large skillet over medium-high heat. Add butter to the skillet and let it melt.

Step 6

Once the skillet is hot, add the marinated steak strips in a single layer. Cook for 2-3 minutes on each side until browned but not overcooked. Remove the steak from the skillet and set aside.

Step 7

In the same skillet, add the sliced onion and bell peppers. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

Step 8

Return the cooked steak to the skillet, mix it with the vegetables, and heat everything through for an additional 2-3 minutes.

Step 9

Slice the avocado in half, remove the pit, and carefully scoop out the flesh. Slice it into strips.

Step 10

Chop the fresh cilantro for garnish.

Step 11

Serve the beef fajitas hot, garnished with sliced avocado, chopped cilantro, a dollop of sour cream, and a sprinkle of shredded cheddar cheese.
