Ingredients

  • 2 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 1 cup beef broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 4 low carb sandwich rolls
  • 4 dill pickles
  • 2 tablespoons mustard
  • 4 tablespoons sugar-free barbecue sauce

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, mix together the onion powder, garlic powder, smoked paprika, ground black pepper, and sea salt.

Step 3

Rub the mixture all over the beef brisket.

Step 4

In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.

Step 5

Sear the brisket on all sides until it is browned, about 3-4 minutes per side.

Step 6

Remove the brisket and set it aside on a plate.

Step 7

Deglaze the pot with the beef broth, scraping up any browned bits from the bottom.

Step 8

Add the apple cider vinegar and Worcestershire sauce to the pot and stir to combine.

Step 9

Return the brisket to the pot, fat side up, and cover tightly with a lid or foil.

Step 10

Transfer the pot to the preheated oven and cook for approximately 3.5 to 4 hours, or until the brisket is very tender.

Step 11

Once cooked, remove the pot from the oven and let the brisket rest for 15 minutes.

Step 12

Thinly slice the brisket against the grain for tender slices.

Step 13

Assemble the sandwiches by cutting the low carb rolls in half and spreading each side with mustard.

Step 14

Add slices of brisket to the rolls, top with a spoonful of sugar-free barbecue sauce, and finish with a dill pickle.

Step 15

Serve immediately and enjoy your Low Carb Classic Beef Brisket Sandwich!
