Ingredients

  • 2 racks pork baby back ribs
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 1 teaspoon chili powder
  • 2 tablespoons erythritol or low carb sweetener
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon liquid smoke
  • 2 tablespoons olive oil
  • 1 cup water

Directions

Step 1

Preheat your oven to 275°F (135°C).

Step 2

Rinse the ribs and pat them dry with paper towels. Remove the thin membrane from the back of each rack if it's present.

Step 3

In a small bowl, mix together the smoked paprika, garlic powder, onion powder, black pepper, sea salt, chili powder, and erythritol.

Step 4

Rub the spice mixture evenly over both sides of the ribs.

Step 5

Place the ribs on a baking sheet lined with aluminum foil and cover with another sheet of aluminum foil, sealing edges.

Step 6

Bake in the preheated oven for about 2.5 hours, or until the ribs are tender.

Step 7

Meanwhile, in a saucepan over medium heat, combine apple cider vinegar, tomato paste, Worcestershire sauce, liquid smoke, olive oil, and water. Stir well and bring to a simmer.

Step 8

Reduce heat and let the sauce simmer for about 15 minutes, stirring occasionally, until it thickens slightly.

Step 9

Remove ribs from the oven and discard the top layer of foil. Brush the ribs generously with the prepared BBQ sauce.

Step 10

Turn on your broiler to high and broil the ribs for 5-7 minutes, until the sauce caramelizes and lightly chars.

Step 11

Let the ribs rest for a few minutes before slicing them into portions and serving.

Step 12

Serve with the remaining BBQ sauce on the side.
