Ingredients

  • 1 head Cauliflower florets
  • 1 cup Heavy cream
  • 4 oz Cream cheese
  • 2 cups Cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Mozzarella cheese, shredded
  • 2 tbsp Butter
  • 0.5 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Paprika

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the cauliflower into bite-sized florets and steam them over boiling water for about 5-7 minutes until tender but not mushy. Drain and set aside.

Step 3

In a large saucepan over medium heat, melt the butter and add the heavy cream. Stir in the cream cheese and cook until melted and smooth.

Step 4

Gradually add the cheddar cheese, parmesan cheese, and mozzarella cheese to the saucepan, stirring continuously until the cheeses are completely melted and the sauce is creamy.

Step 5

Mix in the garlic powder, onion powder, salt, black pepper, and paprika into the cheese sauce. Stir until well combined.

Step 6

Place the steamed cauliflower florets into a large baking dish and pour the cheese sauce evenly over the top, ensuring all the cauliflower is coated.

Step 7

Sprinkle some extra shredded cheddar cheese on top for a nice crust, if desired.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

Step 9

Allow to cool slightly before serving. Enjoy your low-carb classic baked mac and cheese as a comforting main dish or a delectable side.
