Ingredients

  • 2 cups Almond flour
  • 3/4 cup Erythritol or preferred low-carb sweetener
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Whole almonds, chopped
  • 2 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Almond extract
  • 2 tablespoons Butter, melted

Directions

Step 1

Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the almond flour, erythritol, baking powder, and salt. Stir in the chopped almonds.

Step 3

In a separate bowl, whisk together the eggs, vanilla extract, almond extract, and melted butter until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until a dough forms. The dough should be slightly sticky.

Divide the dough in half and shape each half into a log about 10 inches long and 3 inches wide on the prepared baking sheet.
