Ingredients

  • 1.5 cups Mozzarella cheese, shredded
  • 2 oz Cream cheese, room temperature
  • 1.5 cups Almond flour
  • 2 tbsp Coconut flour
  • 1 tsp Baking powder
  • 0.25 cup Sugar-free sweetener (erythritol or similar)
  • 1 large Egg
  • 3 tbsp Butter, melted
  • 1 tbsp Ground cinnamon
  • 1 tsp Vanilla extract
  • 4 oz Cream cheese, softened
  • 0.25 cup Powdered sugar-free sweetener
  • 2 tbsp Heavy whipping cream

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.

Step 2

In a microwave-safe bowl, combine the shredded mozzarella cheese and 2 oz of cream cheese. Microwave on high in 30-second intervals, stirring each time, until the mixture is melted and well-combined.

Step 3

In a separate bowl, mix together the almond flour, coconut flour, and baking powder.

Step 4

Add the flour mixture to the melted cheese mixture along with the egg. Mix until a dough forms.

Step 5

Place the dough between two large sheets of parchment paper and roll out into a rectangular shape, about 1/4 inch thick.

For the filling, blend 2 tbsp of melted butter with the sugar-free sweetener and ground cinnamon.

Brush the cinnamon filling over the rolled-out dough evenly.

Starting from one of the shorter edges, carefully roll the dough into a log shape. If the dough is sticky, use the parchment paper to help lift and roll it.

Cut the log into 6 equal pieces and place them cut side up in the prepared baking dish.

Bake in the preheated oven for 18-20 minutes or until the rolls are lightly golden brown.

While the rolls are baking, prepare the frosting by beating 4 oz of softened cream cheese, powdered sugar-free sweetener, heavy whipping cream, and vanilla extract together until smooth and creamy.

Allow the baked rolls to cool for about 5 minutes, then generously spread the cream cheese frosting over the top.
