Ingredients

  • 4 Large apples
  • 4 tablespoons Butter
  • 2 teaspoons Ground cinnamon
  • 4 tablespoons Granulated erythritol or stevia
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped pecans or walnuts
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 cup Water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Core the apples using an apple corer, removing the seeds. Leave about a half an inch of the apple core intact at the bottom to hold the filling.

Step 3

In a small bowl, mix together the butter, ground cinnamon, erythritol (or stevia), vanilla extract, chopped nuts, ground nutmeg, and salt. Ensure all ingredients are well combined to form a crumbly mixture.

Step 4

Stuff each apple cavity with equal amounts of the cinnamon-nut mixture.

Step 5

Place the stuffed apples in a baking dish, making sure they are snug and upright.

Step 6

Pour 1 cup of water into the bottom of the dish to help steam the apples while they bake.

Step 7

Cover the dish with aluminum foil to prevent the tops from over-browning.

Step 8

Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 15 minutes, or until the apples are tender and easily pierced with a fork.

Step 9

Remove from the oven and allow to cool slightly before serving. These baked apples are delicious on their own, or you can serve them with a scoop of low-carb ice cream or a dollop of whipped cream for added indulgence.
