Ingredients

  • 1 large Cauliflower head
  • 2 tablespoons Olive oil
  • 2 medium Garlic cloves
  • 1 large Lime
  • 0.5 cup Fresh cilantro
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Remove the leaves and core from the cauliflower head. Cut it into large florets.

Step 2

Using a food processor, pulse the cauliflower florets until they reach a rice-like consistency. Be careful not to over-process.

Finely chop the garlic cloves. Set aside.

Step 4

Zest and juice the lime. Reserve both the zest and juice.

Heat the olive oil in a large skillet over medium heat.
