Ingredients

  • 500 grams Zucchini
  • 1 medium, finely chopped Onion
  • 2 medium, pureed Tomato
  • 1 tablespoon Ginger-garlic paste
  • 1 finely chopped Green chili
  • 1 teaspoon Cumin seeds
  • 2 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons, chopped Fresh cilantro
  • 1 tablespoon Lemon juice
  • 2 tablespoons Olive oil
  • 1 whole Bay leaf
  • 250 ml Water

Directions

Step 1

Wash the zucchinis thoroughly and cut them into small cubes.

Step 2

Heat olive oil in a large pan over medium heat. Add cumin seeds and bay leaf, and let them crackle for a few seconds.

Step 3

Add the chopped onion and sauté until golden brown.

Step 4

Stir in the ginger-garlic paste and green chili, sauté for another minute until the raw smell goes away.

Step 5

Add the tomato puree and cook until the oil starts to separate from the mixture.

Step 6

Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Stir well to combine and cook for 2 minutes.

Step 7

Add the cubed zucchini and mix well until the spices coat the zucchini evenly.

Step 8

Pour in water and cover the pan. Allow the zucchini to cook for about 10-15 minutes until tender but not mushy. Stir occasionally.

Step 9

Once the zucchini is cooked, add garam masala and stir it in. Cook for an additional 2 minutes.

Turn off the heat. Add lemon juice and mix well.

Garnish with freshly chopped cilantro before serving.
