Ingredients

  • 2 cups Chickpeas (canned)
  • 1 small Cauliflower
  • 2 medium Tomatoes
  • 1 large Onion
  • 1 inch piece Ginger
  • 4 cloves Garlic
  • 1 medium Green Chili
  • 1 teaspoon Cumin Seeds
  • 0.5 teaspoon Turmeric Powder
  • 1.5 teaspoons Coriander Powder
  • 1 teaspoon Garam Masala
  • 0.5 teaspoon Red Chili Powder
  • 1 teaspoon Salt
  • 2 tablespoons Fresh Coriander/Cilantro
  • 2 tablespoons Olive Oil
  • 1 cup Water

Directions

Step 1

Rinse and drain the canned chickpeas thoroughly under cold water.

Step 2

Cut the cauliflower into small florets.

Step 3

Finely chop the onion, tomatoes, ginger, garlic, and green chili.

Step 4

Heat olive oil in a large pan over medium heat.

Step 5

Add cumin seeds and let them splutter for a few seconds.

Step 6

Add the chopped onions to the pan and sauté until they are golden brown.

Step 7

Add ginger, garlic, and green chili to the pan and cook for 1-2 minutes until fragrant.

Step 8

Add chopped tomatoes, turmeric powder, coriander powder, and red chili powder. Cook until the tomatoes are soft and oil starts to separate from the mixture.

Stir in the chickpeas and cauliflower florets, mixing well with the spice mixture.
