Ingredients

  • 2 medium Zucchini
  • 2 cups Almond flour
  • 0.5 cup Unsweetened cocoa powder

  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.75 cup Granulated erythritol
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Coconut oil, melted
  • 0.5 cup Dark chocolate chips (sugar-free)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.

Grate the zucchini using a medium grater and squeeze out the excess moisture using a clean kitchen towel. You should have about 1 and 1/2 cups of grated zucchini.
