Ingredients

  • 1 cup unsweetened cocoa powder
  • 0.75 cup erythritol (or preferred sugar substitute with equivalent sweetness)
  • 2 cups water
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 teaspoon espresso powder (optional, for enhanced chocolate flavor)

Directions

Step 1

In a medium saucepan, combine the unsweetened cocoa powder, erythritol, and salt. Stir together to break up any lumps in the cocoa powder and distribute the erythritol evenly.

Step 2

Add the water to the saucepan. Place the saucepan over medium heat and whisk continuously until the mixture is smooth and begins to simmer. This should take about 5 minutes.

Step 3

Once the mixture reaches a simmer, remove it from the heat and stir in the vanilla extract and espresso powder (if using).

Step 4

Let the mixture cool to room temperature, then transfer it to a blender or food processor. Blend until completely smooth, ensuring there are no remaining lumps.

Step 5

Pour the blended mixture into a shallow container and cover it with a lid or plastic wrap.

Step 6

Place the container in the freezer. After about 45 minutes, remove the sorbet from the freezer and stir it with a fork or whisk, breaking up any ice crystals.

Step 7

Return the sorbet to the freezer, repeating the stirring process every 30 minutes for the next 2 to 3 hours, or until the sorbet is firm and has a smooth, scoop-able consistency.

Step 8

Allow the sorbet to sit at room temperature for a few minutes before scooping and serving.
