Ingredients

  • 1.5 cups unsweetened almond milk
  • 0.25 cup unsweetened cocoa powder
  • 1 tablespoon unflavored gelatin powder
  • 2 scoops vanilla protein powder
  • 0.25 cup granulated erythritol or sweetener of choice
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 0.25 cup dark chocolate pieces (at least 70% cacao), chopped

Directions

Step 1

In a medium saucepan, pour 1 cup of the almond milk and sprinkles of gelatin powder over it. Let it sit for 5 minutes to allow the gelatin to bloom.

Step 2

Place the saucepan over medium heat and whisk in the cocoa powder, granulated sweetener, and salt. Stir consistently until the gelatin has dissolved completely and the mixture reaches a gentle simmer. Do not let it boil.

Step 3

Remove the saucepan from the heat and add the chopped dark chocolate pieces. Let them sit for about a minute to soften, then stir until the chocolate is completely melted and smooth.

Step 4

In a mixing bowl, combine the remaining 0.5 cup of almond milk with the vanilla protein powder and vanilla extract. Whisk well until smooth and consistency emerges without lumps.

Step 5

Slowly pour the chocolate mixture into the protein mixture, whisking continuously to create a smooth blended pudding.

Step 6

Transfer the pudding into individual serving cups or a large bowl. Cover with plastic wrap, pressing directly onto the surface of the pudding to prevent skin from forming.

Step 7

Refrigerate for at least 2 hours or until set. Stir briefly before serving, and optionally, garnish with fresh berries or whipped cream (unsweetened or sugar-free) for an additional treat.
