  • 0.5 cup Coconut Flour
  • 0.5 cup Sugar-free Chocolate Chips
  • 0.5 cup Old-fashioned Rolled Oats
  • 0.25 cup Unsweetened Cocoa Powder
  • 0.75 cup Granulated Erythritol or Sweetener of Choice
  • 0.5 cup Butter
  • 3 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, cocoa powder, erythritol, baking powder, and salt. Mix until well combined.

Step 3

In a separate small bowl, melt the butter in the microwave or on the stovetop. Allow it to cool slightly.

Step 4

Whisk the eggs and vanilla extract into the melted butter until well mixed.

Step 5

Pour the wet ingredients into the dry ingredients and stir until a thick batter forms.

Step 6

Fold in the oats and sugar-free chocolate chips until evenly distributed throughout the batter.

Step 7

Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.

Step 8

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean.

Step 9

Allow the bars to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Step 10

Once cooled, cut the bars into 12 equal pieces and serve. Store leftovers in an airtight container at room temperature for up to 5 days.
