Ingredients

  • 2 cups Heavy cream
  • 0.5 cup Unsweetened cocoa powder
  • 0.75 cup Granulated erythritol sweetener
  • 2 teaspoons Vanilla extract
  • 1 cup Dark chocolate (70% cocoa or higher), melted
  • 1 cup Chopped nuts (such as almonds or pecans)
  • 2 tablespoons Coconut oil
  • 0.25 teaspoon Salt

Directions

Step 1

In a large mixing bowl, whisk together the heavy cream, unsweetened cocoa powder, granulated erythritol, vanilla extract, and salt until the mixture is smooth and well combined.

Step 2

Pour the mixture into ice cream bar molds, filling each mold almost to the top. Insert sticks into the molds.

Step 3

Freeze the ice cream bars for at least 4 hours, or until they are completely solid.

Step 4

Prepare the chocolate coating by melting the dark chocolate and coconut oil together in a microwave-safe bowl or over a double boiler. Stir until smooth.

Step 5

Remove the ice cream bars from the molds. Dip each bar into the melted chocolate, covering it completely. Allow excess chocolate to drip off.

Step 6

Quickly sprinkle chopped nuts onto the chocolate-covered bars before the chocolate sets. Press gently to ensure they stick.

Step 7

Place the coated ice cream bars on a baking sheet lined with parchment paper and return them to the freezer for at least 30 minutes to set the chocolate.

Step 8

Once the bars are set, they are ready to serve or can be stored in a freezer-safe container for up to 1 month.
