Ingredients

  • 100 grams Butter
  • 100 grams Low-carb dark chocolate (85% cocoa or more)
  • 25 grams Almond flour
  • 1 tablespoon Cocoa powder
  • 50 grams Granulated erythritol (or preferred low-carb sweetener)
  • 2 large Eggs
  • 2 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 200°C (400°F). Lightly grease four ramekins with butter and dust with cocoa powder, ensuring each is coated evenly.

Step 2

In a heatproof bowl, combine the butter and low-carb dark chocolate. Set this bowl over a pot of simmering water (double boiler method) and stir occasionally until melted and smooth. Remove from heat and set aside to cool slightly.

Step 3

In a mixing bowl, whisk together the eggs, egg yolks, and granulated erythritol until the mixture becomes pale and slightly thickened. This should take about 3-4 minutes.

Step 4

Fold the melted chocolate mixture into the egg mixture, being careful not to deflate the eggs. Add the vanilla extract and salt at this stage and mix gently.

Sift in the almond flour and cocoa powder into the chocolate mixture, and fold carefully until everything is just combined.
