Ingredients

  • 6 pieces Low-carb waffle cones
  • 1 cup Sugar-free chocolate chips
  • 2 tablespoons Coconut oil
  • 3 cups Low-carb ice cream
  • 0.5 cup Chopped nuts or unsweetened shredded coconut (optional, for garnish)

Directions

Step 1

Place a baking sheet lined with parchment paper into the freezer to chill. This will help set the chocolate quickly once the cones are dipped.

Step 2

In a small microwave-safe bowl, combine the sugar-free chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth. Alternatively, melt the chocolate and coconut oil over a double boiler.

Step 3

Dip the tops of the low-carb waffle cones into the melted chocolate, letting any excess drip back into the bowl. If desired, immediately sprinkle with chopped nuts or unsweetened shredded coconut before the chocolate sets.

Step 4

Place the chocolate-dipped cones onto the chilled baking sheet and return to the freezer until the chocolate is firm, approximately 5-10 minutes.

Step 5

Once the chocolate is set, fill each cone with about half a cup of low-carb ice cream, using a scoop to press it down gently but firmly into the cone.

Step 6

Enjoy immediately. Store any leftover cones and ice cream separately in the freezer for up to one week.
