  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 cup Unsalted butter, chilled
  • 2 large Eggs
  • 1 cup Grated mozzarella cheese
  • 2 tablespoons Cream cheese, softened
  • 0.5 cup Dark chocolate (sugar-free), chopped
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 3

Cut the chilled butter into the dry ingredients using a pastry cutter or two knives until the mixture resembles coarse crumbs.

Step 4

Melt the mozzarella cheese in a microwave-safe bowl in 30-second intervals until fully melted and smooth.

Step 5

Mix the melted mozzarella cheese and cream cheese with the flour mixture until a dough forms. This can be done using an electric mixer for best results.

Step 6

Add the eggs and vanilla extract to the dough and continue mixing until fully incorporated.

Step 7

Roll the dough between two sheets of parchment paper into a large rectangle, about 1/4 inch thick.

Step 8

Cut the dough into 8 triangles.

Step 9

Place a few pieces of dark chocolate at the wide end of each triangle.

Step 10

Roll the triangles, starting from the wide end and tucking the point underneath to form a croissant shape.

Step 11

Transfer the croissants to the prepared baking sheet.

Step 12

Bake for 15-20 minutes or until the croissants are golden brown and firm to the touch.

Step 13

Allow the croissants to cool slightly before serving. Enjoy your low-carb chocolate croissants warm or at room temperature.
