Ingredients

  • 1.5 cups Almond flour
  • 0.25 cup Unsweetened cocoa powder
  • 0.5 cup Granulated erythritol or sweetener of choice
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Butter, melted
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 cup Sugar-free dark chocolate chips
  • 2 tablespoons Coconut oil

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, combine the almond flour, unsweetened cocoa powder, granulated erythritol, baking powder, and salt. Mix well to ensure there are no lumps.

Step 3

In another bowl, whisk together the melted butter, egg, and vanilla extract until smooth and well combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until a dough forms. The dough should be thick and slightly sticky.

Step 5

Scoop the dough using a tablespoon and roll it into balls. Place the dough balls onto the prepared baking sheet and slightly flatten each with your fingers.

Step 6

Bake in the preheated oven for 10-12 minutes until the edges are set. Allow the cookies to cool completely on the baking sheet.

Step 7

While the cookies are cooling, melt the sugar-free dark chocolate chips with the coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring in between until smooth.

Step 8

Dip each cooled cookie into the melted chocolate to coat halfway or completely, as desired. Let excess chocolate drip back into the bowl, then place the cookies back on the parchment-lined sheet.

Step 9

Refrigerate the cookies for about 10-15 minutes or until the chocolate is set. Serve and enjoy!
