Ingredients

  • 100 grams Almond flour
  • 30 grams Coconut flour
  • 100 grams Unsalted butter
  • 100 grams Cream cheese
  • 2 Eggs
  • 50 grams Erythritol sweetener
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 50 grams Low-carb dark chocolate chips
  • 1 Egg yolk (for glaze)
  • 1 tablespoon Water (for glaze)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a medium-sized bowl, melt the butter and cream cheese together until smooth. You can use a microwave or a stove for this step.

Step 3

In another bowl, mix together the almond flour, coconut flour, erythritol, baking powder, and salt.

Step 4

Add the melted butter and cream cheese mixture to the dry ingredients and mix well.

Step 5

Beat the eggs and add them to the dough along with the vanilla extract. Stir until fully combined.

Step 6

Gently fold in the low-carb chocolate chips.

Step 7

Place the dough between two sheets of parchment paper and roll it out into a rectangular shape, about 1/4 inch thick.

Step 8

Using a sharp knife or pizza cutter, cut the dough into triangles, roughly 4 inches wide at the base.

Step 9

Roll each triangle from the base, towards the tip, to form a crescent shape. Place them on the prepared baking sheet.

Step 10

In a small bowl, beat the egg yolk with water to make an egg wash. Brush the croissants lightly with this mixture.

Step 11

Bake in the preheated oven for 22-25 minutes or until golden brown.

Step 12

Remove from the oven and allow the croissants to cool on a wire rack before serving.
