Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Chipotle peppers in adobo sauce
  • 1 whole Lime
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 4 pieces Low-carb tortillas
  • 1 cup Shredded cheddar cheese
  • 2 stalks Green onions, sliced
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

Start by marinating the chicken. In a bowl, combine chipotle peppers in adobo sauce, juice of the lime, garlic powder, cumin, salt, and black pepper.

Add the chicken breasts to the marinade and coat them evenly. Allow them to marinate for at least 15 minutes.

Heat the olive oil in a large skillet over medium-high heat.
