Ingredients

  • 6 cups chicken broth
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon dry sherry or Shaoxing wine
  • 2 tablespoons fresh ginger
  • 3 cloves garlic
  • 3 stalks green onions
  • 2 small heads bok choy
  • 8 ounces shiitake mushrooms
  • 2 cups cooked chicken breast
  • 7 ounces konjac noodles (shirataki noodles)
  • 1 teaspoon sesame oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by preparing the ingredients: Mince the garlic, finely chop the fresh ginger, slice the green onions, and cut the bok choy into bite-sized pieces. Slice the cooked chicken breast and the shiitake mushrooms.

Step 2

Rinse and drain the konjac noodles under cold water. Set them aside to dry slightly.

Step 3

In a large pot, combine the chicken broth, soy sauce, and dry sherry or Shaoxing wine. Add the minced garlic and chopped ginger. Bring the mixture to a simmer over medium heat.

Step 4

Once simmering, add the sliced shiitake mushrooms to the pot. Cook for about 5 minutes until the mushrooms begin to soften.

Step 5

Add the sliced bok choy and the cooked chicken breast to the pot. Let them cook for another 3-4 minutes until the bok choy is wilted and the chicken is warmed through.

Step 6

Reduce the heat to low and gently stir in the konjac noodles and sesame oil. Let the noodles heat through for about 2 minutes.

Step 7

Taste and adjust seasoning with the salt and black pepper as needed.

Step 8

Serve the soup hot, garnished with the sliced green onions for added freshness.
