Ingredients

  • 8 pieces Hot dogs (sugar-free, low-carb)
  • 1 pound Ground beef (80/20 or leaner)
  • 0.5 cup Onion (finely chopped)
  • 2 cloves Garlic cloves (minced)
  • 2 tablespoons Tomato paste
  • 1 cup Diced tomatoes (drained, no sugar added)
  • 0.5 cup Beef broth (low sodium)
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Shredded cheddar cheese (or your favorite cheese blend)
  • 2 tablespoons Fresh parsley or green onions (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly grease a 9x13-inch baking dish with nonstick spray or oil and set aside.

Step 3

In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon, about 5–7 minutes. Drain any excess grease.

Step 4

Add the chopped onion and minced garlic to the skillet with the beef, and sauté for an additional 3 minutes until softened.

Step 5

Stir in tomato paste, diced tomatoes, beef broth, chili powder, ground cumin, paprika, salt, and black pepper. Simmer the mixture for 8–10 minutes, allowing the flavors to combine and the chili to thicken slightly.

Step 6

While the chili simmers, arrange the hot dogs in a single layer in the prepared baking dish.

Step 7

Carefully pour the chili over the hot dogs, spreading it evenly to cover them.

Step 8

Sprinkle the shredded cheddar cheese over the chili layer.

Step 9

Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the casserole from the oven and let it cool for 5 minutes.

Step 11

Garnish with chopped parsley or green onions if desired, then serve and enjoy!
