Ingredients

  • 1 can (15 oz) canned chickpeas
  • 1 piece large egg
  • 0.5 cup almond flour
  • 0.5 cup chopped onion
  • 2 cloves minced garlic
  • 0.25 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 3 tablespoons olive oil

Directions

Step 1

Drain and rinse the can of chickpeas thoroughly under cold water. Shake off excess water.

Step 2

In a medium mixing bowl, mash the chickpeas with a fork or potato masher until most are crushed but some small bits remain for texture.

Step 3

Add the egg, almond flour, chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper to the mashed chickpeas and mix until well combined.

With your hands, form the mixture into 8 round patties, about 1/2 inch thick each.

In a non-stick skillet, heat olive oil over medium heat.
