  • 0.5 cup chunky peanut butter (sugar-free)
  • 0.5 cup coconut milk
  • 1 tablespoon soy sauce or tamari (low-sodium)
  • 1 tablespoon sweetener (erythritol or stevia)
  • 8 pieces bamboo skewers

Directions

Step 1

Cut the chicken breasts into thin strips, about 1 inch wide.

In a medium bowl, combine coconut aminos, lime juice, olive oil, minced garlic, ground coriander, cumin, smoked paprika, salt, and pepper to make the marinade.
