Ingredients

  • 1 pound Boneless, skinless chicken breasts
  • 10 ounces Spinach, fresh
  • 2 tablespoons Olive oil
  • 1 Onion, finely chopped
  • 3 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 Tomato, diced
  • 0.5 cup Heavy cream
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Turmeric powder
  • 0.25 teaspoon Cayenne pepper
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Water
  • 2 tablespoons Cilantro, chopped for garnish

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large pan over medium heat.

Step 3

Add the chopped onion and sauté until translucent, about 5 minutes.

Step 4

Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Add the diced tomato, cumin, turmeric, cayenne, and salt. Cook for another 3-4 minutes until the tomato softens.

In a blender, add the fresh spinach and 1/4 cup of water; blend until smooth.
