Ingredients

  • 2 pieces boneless skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 pieces low-carb tortillas
  • 1 cup basil leaves
  • 2 cloves garlic
  • 0.25 cup parmesan cheese
  • 2 tablespoons pine nuts
  • 1 tablespoon lemon juice
  • 8 pieces cherry tomatoes
  • 1 cup arugula

Directions

Step 1

Preheat the oven to 375°F (190°C).

Season the chicken breasts with salt and black pepper.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear the chicken breasts on both sides until golden brown, about 3-4 minutes per side.

Transfer the chicken to a baking sheet and bake in the preheated oven for 10-15 minutes, or until fully cooked (internal temperature should reach 165°F or 75°C).
